Corn Salad

Ingredients
450g tin corn kernels
110g cashew nuts
1 apple
1 unsweetened pineapple ring
4 sticks celery
3/4-cup cottage cheese (we used garlic and chive flavour)
1 Tsp lemon juice

Preparation
Strain the sweet-corn and place it in a salad bowl with
the cashews. Chop and dice the apple and the pineapple,
finely slice the celery and add with the remaining
ingredients. Toss all together.
